Thai Mung Bean Vermicelli Glass Noodle Salad (Yum Woon Sen).

Yum Woon Sen is a popular salad dish using glass noodle in Thailand. Glass noodle salad is make from mung bean noodle as known as bean thread vermicelli. It has wonderful bright flavors with lots of crunchy vegetables. Meaning, this dish considered to be a healthy dish. So if you want to lose some weight give it a try. Let's get start.

Ingredients: For 1 Serving - Scale it up if you do a lot of serving

  • Noodles
  • Protein:
    • 5-6 Shrimps (any amount you want)
    • 100 gr ground pork
    • 1 Tbsp dried shrimp
  • Condiments:
    • 2 cloves garlic
    • 10 sprigs cilantro, stems and leaves separated
    • Thai chilies (if you like spicy)
    • 1 Tbsp palm sugar, finely chopped
    • 2-3 Tbsp of fish sauce (different on the brand)
    • 3 Tbsp lime juice
    • 1 tomato, cut into wedges
    • 1/4 cup julienned onion
    • 2 inner small stalks and leaves of celery
    • Mushroom seasoning
    • 1/4 cup roasted peanuts

Directions:

  • Noodles:
    1. Soak the noodles in room temperature water for 10 minutes or until soft. (Use this time to prepare the sauce)
    2. Drain and cut the noodles using scissor to shorten them. 
    3. Soak in hot boil water for 2 minutes. Use this water to boil the shrimps
  • Sauce:
    1. Pound the garlic, cilantro stems (cut in small chunk), Thai chilies, and palm sugar in the mortar finely. (If you do not have a mortar then you can chop them finely).
    2. Add the fish sauce and lime juice. Taste and adjust.
    3. Leave it aside
  • Protein
    • Dried Shrimp:
      • Place the dried shrimp in hot water and cover it for 5 minutes until it soften
      • Drain and wash 
      • In a mortar, pound it until it broke into small pieces. You can chop them if you do not have a mortar
      • Set aside
    • Shrimp:
      • Peeled and wash the shrimp
      • Boil it in the hot boil water that was used for noodles
      • Sliced the shrimp in half (optional)
    • Ground Pork:
      • Season it with 1tsp of mushroom seasoning for flavor
      • In a frying pan, add 1 tbsp cooking oil. Stir fry it until cook
  • Vegetables:
    • Sliced the tomato in wedges
    • Julienned the sweet onion
    • Cut the celery in bite size
  • Final Product:
    • In a mixing bowl, add the vegetables, the proteins, and the sauces. Mix it all up. 
    • Add roasted peanut and chopped cilantro stems for garnish.
